It's been so long since I've blogged so this feels admittedly very exciting!
Here's a super quick pasta you can throw together for a nice summer lunch.
sundried tomatoes in olive oil
almonds (or pine nuts)
salt & pepper
Cook your penne pasta to al dente following.
To make the pesto I grated a clove of garlic into the processor, added about 8-10 almonds (you can use pine nuts if you prefer a traditional pesto. I just happen to like almonds in mine), a large handful of basil and salt and pepper. While the processor is blending I pour in olive oil until I get a nice paste like consistency.
I heated up half a cup of heavy cream and added a little butter in a small pan over medium low heat. Once it's heated through I mix in the pesto until thorough mixed in.
Pour the pesto cream cause over the pasta. Add a few sundried tomatoes chopped up as finely as possible and a handful of cherry tomatoes cut into quarters. Give it a nice toss to mix well. If it's a little runny let it sit for about 5 minutes to thicken up.
Add some fresh chopped basil on top for a little color and freshness.
By the way, within the next few weeks wild fox blog will be rebranding itself to fox & ink. I've decided to change my etsy shop name from craftcolorfully to fox & ink so it made sense I changed wild fox blog to the same name to help keep branding consistent.
